O.N.E. Coconut Water Rice Pudding

Ingredients

  • Three 11-oz containers of O.N.E. Coconut Water
  • 2/3 c of Arborio rice
  • 1/3 c currants
  • 2 egg whites
  • Coconut shavings or toasted coconut flakes as garnish

Instructions

  1. Bring O.N.E. Coconut Water to a boil in a saucepan. Stir in rice and cook for 20 to 25 minutes until rice is soft. The mixture should have retained quite a bit of liquid. If not, add more O.N.E. Coconut Water.
  2. Stir in currants.
  3. Beat egg whites to a soft peak and fold in while rice is still warm.
  4. Refrigerate four hours. Serve cold.
