Garden Bounty Salad
For the Dressing
- Slightly less than 1/4 c really raw cashews
- Juice of half a lemon or lime
- ½ small clove of garlic
- 2-3 Tbsp of O.N.E. Coconut Water
- ½ medium-sized stalk of celery
- 1½-inch peeled piece of cucumber
In a blender, grind cashews to a powder. Add other solid ingredients and blend again.
Add lemon or lime juice and O.N.E. Coconut Water. Blend until smooth.
For the salad
- Apple
- Celery
- Zucchini
- Cucumber
Chop celery and cucumber.
Slice apple by hand.
Turn zucchini into pretty spirals (or slice however you desire).
Pile cucumber, celery and apple in the middle of a bowl, surround with zucchini and pour dressing on top.
Coconut Water in the Kitchen
Cooking with coconut water is a great way to add nutrients without adding a lot of calories. Try using pure coconut water:
- To deglaze a pan when you don’t want to use alcohol.
- Use instead of water when cooking rice or other grains.
- Make geletin deserts with coconut water.
- Try as a braising liquid for pork or beef.
- Mixed with cornstarch to thicken Asian stir-fry dishes
- Freeze it in ice pop molds for kids
- Add to some soups and sauces
- Mix with powdered sugar to make a sweet glaze for baked goods
- In ceviche
- Salad dressings
- Refreshing cocktails (as the alcohol dehydrates you, the coconut water replenishes)
- Delicious mocktails (alcohol-free)
- Healthy smoothies
